9. Steamed Yam Cake

Ingredients: Steamed Yam Cake

  • Yam 300g (diced)
  • Salt ¾ tsp
  • Fine sugar 1 tbsp
  • White pepper powder ¼ tsp
  • Five-spice powder ½ tsp
  • Chicken powder 1¼ tsp
  • Water for soaking ingredients 540g
  • Rice flour 160g
  • Wheat starch 40g
  • Shallots 80g (thinly sliced)
  • Dried shrimp 60g (soaked, chopped)
  • Dried mushrooms 20g (soaked, diced)
  • Spring onion 1 stalk (chopped)
  • Red chili 1 (diced)

Steps:

  1. Steam 300g yam in the i8 Steam Oven at 110°C for 15 minutes until softened (adjust time based on thickness).
  2. Mash 100g of the steamed yam, mix with seasoning and soaking water, and stir well.
  3. Sift and mix rice flour and wheat starch, then combine with the mixture.
  4. Add 150g oil and shallots to the oven, select "Fried Onion" mode.
  5. Drain and set aside the crispy shallots.
  6. Heat 4 tbsp oil, sauté dried shrimp over medium heat for 2 minutes.
  7. Add mushrooms and 200g steamed yam, stir-fry for 3 minutes.
  8. Pour in the batter mixture, stirring until fully combined.
  9. Cook over medium-low heat until thickened.
  10. Grease and line a 9”x6” baking tray, pour in the mixture.
  11. Smooth the surface with a wet spatula, then steam in the i8 Steam Oven using "Steamed Yam Cake" mode.
  12. Once done, sprinkle spring onions and chili, then let it sit for 5 minutes.
  13. Let it cool completely before unmolding.
  14. Garnish with crispy shallots before serving.

材料:芋头糕

  • 芋头 300g (切丁)
  • 盐 ¾ 茶匙
  • 细砂糖 1 汤匙
  • 胡椒粉 ¼ 茶匙
  • 五香粉 ½ 茶匙
  • 鸡精粉 1¼ 茶匙
  • 浸泡材料的水 540g
  • 粘米粉 160g
  • 小麦淀粉 40g
  • 红葱头 80g (切薄片)
  • 虾米 60g (浸泡,剁碎)
  • 香菇 20g (浸泡切丁)
  • 青葱 1 棵 (切粒)
  • 红辣椒 1 条 (切丁)

步骤:
1)将 300g 芋头 放入 i8 蒸烤箱110°C 蒸 15 分钟,至软化 (根据厚度调整时间)。
2)取出 100g 蒸熟芋头 压成泥,加入调味料和 浸泡材料的水 搅拌。
3)将 粘米粉 和 小麦淀粉 混合过筛,加入搅拌均匀。
4)150g 油 加入红葱头,放入烤箱选择 "Fried Onion" 模式。
5)烤好后沥干油,红葱头酥备用。
6)加热 4 汤匙油,中火炒 虾米 2 分钟。
7)加入 香菇200g 蒸熟芋头,翻炒 3 分钟
8)倒入粉浆,搅拌均匀。
9)用 中小火 煮至浓稠。
10)在 9”x6” 烤盘抹油,铺上烘焙纸,倒入混合物。
11)用湿刮刀抹平表面,放入 i8 蒸烤箱 选择 "Steamed Yam Cake" 模式。
12)蒸好后撒上 青葱和红辣椒焖 5 分钟
13)完全冷却后再脱模。
14)脱模后撒上 红葱头酥 即可享用。
