14. Bun

Ingredients:

  • 415 g all-purpose flour / 中筋面粉
  • 5 g instant yeast / 高活性干酵母
  • 30 g sugar / 砂糖
  • 9 g salt / 盐
  • 260 g warm milk / 温牛奶
  • 50 g egg / 蛋
  • 44 g unsalted butter / 无盐黄油
  • 1 tbsp extra egg wash (to brush before baking) / 额外蛋液,刷表面(入炉前)
  • 1 tbsp extra melted butter (to brush after baking) / 额外融化黄油,刷表面(出炉后)

Instructions:

  1. Steam the milk for 30 seconds 110°C.
  2. In a mixing bowl, add flour, yeast, sugar, salt, warm milk, and egg, then mix and knead into a dough.
  3. Take the dough out, knead slightly by hand, and let it proof for 30 minutes.
  4. Return the dough to the mixing bowl, add softened butter, and knead again.
  5. Grease an empty bowl, place the dough inside, and put it in the i8 Steam Oven using the fermentation function.
  6. Once done, take out the dough, divide it into 15 equal portions, and shape them into small balls.
  7. Arrange the dough balls neatly on a baking tray and place them back into the oven for a second fermentation using the same function.
  8. Brush the surface with egg wash and place the tray back into the oven.
  9. Select the "Bun Preset" mode.
  10. Once baked, take them out and immediately brush with melted butter while hot.

材料:

  • 1 大匙 额外蛋液(入炉前刷表面)/ extra egg wash to brush before bake
  • 1 大匙 额外融化黄油(出炉后刷表面)/ extra melted butter to brush after bake

步骤:

  1. 蒸牛奶30秒220°C
  2. 搅拌机内加入 中筋面粉、酵母、糖、盐、温牛奶、鸡蛋,混合均匀揉面团。
  3. 取出稍微揉一下,然后发酵30分钟
  4. 放回搅拌锅,加入 软化黄油,继续揉面团。
  5. 取一个空碗,抹上一点油,放入面团,放入 i8蒸烤箱,选择 发酵功能
  6. 取出后,分成 15 份,稍微揉成球状。
  7. 整齐排入烤盘,再次放入 i8蒸烤箱 进行 二次发酵
  8. 在面团表面刷蛋液,放入 i8蒸烤箱
  9. 选择 “Bun Preset” 模式。
  10. 烘焙结束后,趁热刷上 融化黄油 即可。
